Job description

Job Title: Sous Chef / Junior Sous Chef

Job Level: Senior

Department: F&B Department

Location: Singapore

Salary: $3,400 to $4,200/month

Working days: 5 days a week | 54 working hours per week | 2 day off

Overall Job Objectives:

The Sous Chef / Junior Sous Chef supports the Head Chef in managing daily kitchen operations. The role is responsible for maintaining food quality and consistency, supporting kitchen service, guiding junior kitchen team members, and ensuring that established recipes, preparation methods, hygiene standards, and kitchen procedures are followed.

Core Responsibilities:

  • Support the Head Chef in the daily operation and smooth running of the kitchen.
  • Actively participate in food preparation, cooking, plating, and service during daily operations.
  • Prepare and execute Korean and other Asian dishes according to established recipes and quality standards.
  • Ensure consistency in food taste, quality, presentation, portioning, and preparation.
  • Monitor food preparation and cooking processes to ensure dishes are prepared correctly and within service timelines.
  • Guide and support junior chefs and kitchen team members during preparation and service.
  • Monitor ingredient availability, stock rotation, portion control, and food wastage within the kitchen.
  • Assist with receiving, storage, preparation, and proper handling of food ingredients.
  • Maintain high standards of kitchen cleanliness, hygiene, sanitation, and food safety.
  • Ensure proper handling, storage, labelling, and temperature control of food items.
  • Coordinate with the Front of House team to ensure timely and accurate food preparation and service.
  • Assist in menu preparation, new dish testing, and recipe standardisation when required.
  • Take charge of kitchen operations and assigned responsibilities in the absence of the Head Chef, where required.
  • Support kitchen setup for new outlets, menu launches, promotions, and other culinary activities when required.

Job Specifications:

  • Relevant culinary qualification or professional kitchen training is preferred.
  • Proven experience as a Sous Chef, Junior Sous Chef, Chef de Partie, or in a similar kitchen role.
  • Hands-on experience in food preparation, cooking, and kitchen service.
  • Experience in a Korean or other Asian kitchen is an advantage.
  • Experience in fast-paced casual dining or high-volume restaurants is beneficial.
  • Good knowledge of food preparation, cooking techniques, kitchen procedures, and food presentation.
  • Ability to follow and maintain standard recipes and preparation methods.
  • Experience guiding or training junior kitchen team members is preferred.
  • Knowledge of food hygiene, sanitation, safe food handling, and kitchen safety.
  • Good teamwork, communication, organisation, and problem-solving skills.
  • Ability to work effectively under pressure and maintain food quality during busy service periods.
  • Willingness to work according to the restaurant's operating schedule, including weekends and public holidays where required.

  • Proper execution of recipes, mise en place, and kitchen procedures.
  • Effective support and supervision of junior kitchen team members.
  • Clean, organised, and hygienic kitchen operations.
  • Proper control of ingredients, stock rotation, portioning, and food wastage.
  • Smooth coordination between Kitchen and Front of House teams.
  • Reliable day-to-day support to the Head Chef in maintaining kitchen standards and service quality.
