Job Summary

You will lead the central kitchen bakery team to ensure accurate production planning, dough preparation, baking, and sanitation, maintaining quality and efficiency in a fast-paced bakery environment.

Responsibilities

Lead and coordinate the central kitchen bakery team to meet production goals

Plan production schedules and employee shifts to optimize bakery operations

Accurately weigh ingredients and check dough extensibility according to daily mixing schedules

Analyze dough characteristics and perform troubleshooting to maintain product quality

Measure and portion fillings correctly, roll and shape dough without damage following standard procedures

Follow baking procedures precisely to ensure consistent product quality

Weigh fillings accurately and monitor expiration dates to maintain food safety

Implement and adhere to proper cleaning and sanitation procedures in the bakery area

Perform ad-hoc duties such as housekeeping as assigned by the manager

Required competencies and certifications

Minimum 5 years of bakery culinary experience

Work schedule involves rotating shifts, 44 hours per week over 6 days, including day and night shifts
