Job description

  • Lead and oversee all culinary operations of Fairmont Ramla's signature Italian restaurant, ensuring exceptional food quality, presentation, and guest satisfaction.

  • Develop authentic Italian menus, seasonal specialties, and innovative culinary experiences while maintaining Fairmont luxury standards.

  • Plan, organize, and supervise daily kitchen operations, ensuring efficiency, consistency, and smooth service during breakfast, lunch, and dinner operations.

  • Collaborate closely with the Restaurant Manager and Front-of-House team to deliver seamless guest experiences.

  • Maintain the highest standards of food safety, hygiene, sanitation, and HACCP compliance.

  • Monitor food costs, labor costs, inventory, purchasing, and waste management to achieve financial objectives without compromising quality.

  • Lead, coach, mentor, and inspire the culinary brigade, fostering a culture of teamwork, creativity, and continuous development.

  • Ensure all recipes, preparation methods, and plating standards are consistently followed.

  • Work with the Executive Chef to develop seasonal promotions, special events, VIP experiences, and festive dining concepts.

  • Build strong relationships with suppliers to source premium ingredients while maintaining cost efficiency.

  • Promote innovation and excellence while preserving the authenticity of Italian cuisine.

  • Proven experience in authentic Italian cuisine, including handmade pasta, risotto, wood-fired pizza, premium meats, seafood, and classic Italian desserts.

  • Previous experience in a luxury hospitality brand.

  • Strong leadership, coaching, and team development skills.

  • Excellent understanding of food cost control, inventory management, purchasing, and budgeting.

  • Comprehensive knowledge of HACCP, food safety, and sanitation standards.

  • Fluent in English; Arabic is an advantage.

  • Proficiency in Microsoft Office and kitchen management systems.

Reporting & Administration:

  • Prepare and present sales reports, forecasts, and performance analysis to senior management.

  • Track and manage sales leads and opportunities using CRM systems (e.g., Opera, Salesforce, Delphi).

  • Ensure accurate records of all client interactions, leads, and bookings.

  • Maintain up-to-date knowledge of market conditions, competitor offerings, and industry best practices.

Requirements:

  • Education: Bachelor's degree in Hospitality, Business Administration, Marketing, or a related field. A Master’s degree or industry certifications (e.g., CHME, CMP) is a plus.

  • Experience: Minimum of 5–7 years of experience in sales within the luxury hotel or hospitality industry, with a proven track record of achieving sales targets and managing key accounts.

  • Skills:

  • Exceptional sales and negotiation skills, particularly within the luxury market.

  • Strong understanding of the hotel industry, including MICE and leisure segments.

  • Proficiency in CRM systems, hotel sales software (e.g., Opera, Delphi), and Microsoft Office Suite.

  • Fluent in English; additional languages are highly desirable.

  • Ability to think strategically and creatively, with excellent problem-solving skills.

Working Conditions:

  • Full-time position with flexibility for evening and weekend work, depending on client needs and industry events.

  • Travel may be required to meet with clients or attend industry events.

  • Ability to work under pressure and meet sales targets in a competitive environment.
